well, a similar experiement can be done using starch water (magic goo) in a petri dish that vibrates using sound waves, and what ends up happening is the same thing, you can see bumps form on the surface and it creates different patterns. It's very strange indeed.
it's a fairly common physics demonstration, usually not on such a scale, but some light sand in a tube and then passing various frequencies through it to see where the nodes are (i think the sand builds up at the wave nodes).. neat to see an extra dimension added though

I would guess the break down in symmetry has more to do with the mechanics of the system, rather than the quality of the sound (if I read what you are saying correctly).
As the tone got higher and the wavelengths shorter, the non-symettry of the system became more apparent.
So the tarp or piece of board (or whatever the black flat this was) isn't perfecly symetric. It is thicker or stiffer in some areas than in others, or it is supported a little bit differently in different places.
These differences are too small make a difference at lower tones, but become apparent at higher tones.
